Vigneron (NES)

After many years of training and international experience, notably in New Zealand, Fabien Vallélian returned in 2017 to his beloved Lavaux to take on the role of vineyard manager.

In 2025, he took over the prestigious Domaine Pierre Fonjallaz, continuing his commitment to crafting vibrant, precise wines deeply rooted in their terroir. Alongside the renowned Calamin and Dézaley appellations, he has developed a range of natural wines made without additives, produced in part from parcels cultivated together with his long-time friend Xavier.

He is also behind one of Switzerland’s flagship natural wine cuvées: Le Grand-Papa. Made from old Gamay vines planted by his grandfather in 1957, this limited production — fewer than 300 bottles depending on the vintage — has become a true collector’s gem for discerning wine enthusiasts.
